Arborio rice is a short grain rice with a high starch content and requires a ratio of 3:1 (3 parts liquid to 1 part rice.) Arborio rice is used to make Risotto, a traditional Italian rice dish that is as popular as pasta with virtually unlimited gourmet variations. Risotto has a very different cooking method compared to other rice preparation methods as it requires the chef to introduce the liquid to the rice slowly, adding more liquid as the rice absorbs it.



Basic Risotto (Arborio Rice) Cooking Instructions

Ingredients:

1 ½ Cups Village Harvest Arborio or Organic Arborio Rice
4 Tablespoons Butter
2 Tablespoons Olive Oil
1 Medium Onion, Diced
Approximately 5 Cups Vegetable, Chicken or Beef Stock

Preparation:

In a medium size sauce pan, melt the butter and oil.
Add the onion and sauté lightly.
Add the rice and stir with a wooden spoon over medium heat to incorporate the onion.
Add 1 cup of broth and simmer on medium-low heat stirring often.
As the rice absorbs the liquid, continue to add more liquid until the rice is cooked; about 20 – 30 minutes.
Season with salt and pepper.
