This salad will make a great side dish by adding great flavors, bright colors and multiple textures. This is a great dish to make in advance and for entertaining large groups.
Basmati Rice Salad with Dried Fruits and Nuts
Ingredients:
1 Cup Village Harvest Basmati or Organic Basmati Rice, cooked and cooled
4 Scallion, chopped
4 Celery Sticks, chopped
1/2 Cup Fresh Parsley, minced
1/2 Cup Pecans, chopped
1/2 Cup Walnuts, chopped
1/2 Cup Dried Currants (or other dried fruits)
1/4 Cup Lemon Juice
3 Tablespoons Soy Sauce
1 Teaspoons Ground Cumin Powder
1 Cup Olive Oil
Salt and Pepper to taste
Preparation:
Cook Village Harvest Basmati rice according to the directions and let cool.
In a bowl, combine the rice with the scallion, celery, parsley, pecans, walnuts, and currants.
To prepare the vinaigrette, mix the lemon juice, cumin, and soy sauce in a large bowl.
Whisk in the olive oil and mix to incorporate. Adjust with salt and pepper to taste.
Add the vinaigrette to the rice mixture and mix gently to incorporate. Add as much as the vinaigrette as desired tasting often.
Season with salt and pepper.
Serves 4 - 6
