A great side dish that pairs well with lamb, fish, or chicken. The fresh mint works together with the sweet coconut to create a contrast of delicious flavors.
Coconut Jasmine Rice with Mint
Ingredients:
2 Cups Village Harvest Jasmine or Organic Jasmine Rice
1 Cup Water
1 14oz Can Coconut Milk
1 Tablespoon Brown Sugar
1 Teaspoon salt
1/4 Cup Fresh Mint, chopped fine
1/2 Cup Toasted Coconut Flakes
Preparation:
In a quart pan, combine the water, coconut milk, sugar and salt and bring to a boil.
Stir in 1 cup of the Village Harvest Jasmine Rice.
Cover tightly and simmer at medium-low heat for about 20 minutes.
Remove from heat, keeping covered for 5 minutes.
Fluff with fork and serve with the fresh mint and toasted coconut.
Season with salt and pepper.
